Canoe
Whitefish—What’s a Whitefish?
Anthony Walsh is the Executive Chef at Canoe, recently named best Toronto restaurant by Toronto Life magazine. His respect for local and Canadian-sourced ingredients is long-established, and his market-fresh dishes at Canoe are
always seasonally conscious and sourced from the finest artisinal producers.
For City Bites readers, Walsh has chosen to celebrate Ontario white fish — know to many as the “best-eating” freshwater fish. Walsh teams up with Purdy’s Fish Market, which has been providing Southern Ontario with the finest lake fish since 1900. Because of the icy waters, white fish is high in fat, and the flesh is medium firm with a large flake. The taste is mild, more like salmon than trout.
Walsh’s dishes will be paired with wines from Norman Hardie, one of Prince Edward County’s finest producers.
Walsh will prepare and demonstrate these dishes:
Purdy’s whitefish donuts with caviar tartar sauce. With Norman Hardie Pinot Blanc.
Steamed Purdy’s whitefish with Cumbrae farms oxtail and cauliflowers (yes, plural!). With Norman Hardie Pinot Noir.

Brad Long
Veritas
Game and Stuff
Brad Long is chef and owner of Veritas, a hopping downtown restaurant dedicated to sustainably produced local ingredients. You’ve seen him on TV as a host of Restaurant Makeover. Lately, Long has been learning to be a farmer (when he’s not cooking). Long’s ongoing quest is to demystify the whole local/organic/sustainable thing—and he does it with attitude, humour and delicious results.
Using a variety of dishes, Long will explore the glories of game and other “weird stuff.” He’ll match his dishes with fine wines from Tawse Winery, one of Niagara’s finest eco-friendly wineries, practicing artisanal winemaking techniques in a state-of-the-art facility. |

Mark Cutrara
Cowbell
Mark Cutrara burst onto the scene with Cowbell—his ode to all things seasonal, local, sustainable and delicious. It’s also a gorgeous little gem of a restaurant tucked away in Parkdale, inspired by turn-of-the-century French neighbourhood bistros. Cutrara has quickly established his reputation for a deft hand with game meats and wild caught fish, focusing as always on sustainability and quality.
